Potato, Corn and Chard Soup and Salad with Green Goddess!

Instructions

1. Make veggie stock in a large pot. Put ½ C. stock into another large pot and sautee onions and garlic until translucent. You can also use Better Than Bouillon plus water if you don't have time to make your stock from scratch. 

2. Add rest of ingredients, except for corn and chard, and simmer for 10 minutes (You may have to split everything into two pots, using both the sautee pot and the first stock pot). 

3. Add corn and chard last and simmer 10-15 minutes to the desired consistency. 

Green Goddess Dressing: 

1. C tahini, 1 C apple cider vinegar, ½ C Bragg's or soybean sauce, 2 T lemon juice, 6 cloves garlic, 1 C water, ¼ C chopped parsley, 2 T sugar or honey, 1 C olive oil 

2. Combine all ingredients except olive oil in food processor/blender. Blend well, then gently stream in oil. Add salt to taste.
